Recipe Tuscan Veg Soup by Chef Meghna

  • ½ litre veg. stock
  • ½ tin bake beans
  • 1 stick celery finely chopped
  • 10 basil leaves
  • chopped carrots
  • ½ cup chopped onion
  • 2 tbsp. Sugar
  • 2 tbsp. tomato ketchup
  • 2 cloves garlic
  • 2 tbsp. chopped bell peppers
  • ½ cup zucchini cut in to cubes
  • cheese for garnish

Method :-

1.Heat the oil in a sautee pan. 

2.Add onions, celery and garlic with some salt.

3. Add the carrots to the pan and cook it till it becomes tender. 

4.Add all the vegetables along with the baked beans, tomato ketchup and mix it    well by adding the vegitable stock to pan. 

5.Cook the soup till it boils, add some black pepper and garnish the soup with some cheese and a few basil leaves.
